Whole30 Tuna Avocado Salad

Hey guys! I'm back again with another Whole30 recipe. Last night, I had to throw together a quick meal before my husband's softball games. Since we were short on time, I didn't want to pull out a bunch of pots and pans to make a meal. I ended up gathering a few things we had and put together this tuna salad.

This salad uses avocado instead of mayo. It is equally as delicious as any mayo-based recipe, and we all know avocado makes everything better! With a hint of cilantro and red onion, I have to say the taste is a home run. This took me less than 5 minutes to make, which is probably shorter than if we stopped at a Taco Bell (our fav) drive-thru.

We're currently on Day 5 of our Whole30, and we feel great. Of course, we are still battling the so-called "Sugar Dragon" (cravings), but I think we are doing really well sticking to the plan. I plan on capturing a "What I Eat in a Day" Whole30 style soon, to give a better idea of what an entire day looks like. Stay tuned!

Whole30 Tuna Avocado Salad
Makes 3 servings
  • 2 4oz. cans albacore tuna
  • 1 avocado
  • 1/2 lemon, juiced
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh cilantro, chopped
  • salt and pepper to taste
Directions:
  1. Place tuna and the peeled and pitted avocado in a mixing bowl. Begin mashing and mixing the two ingredients together.
  2. Add the lemon juice and combine.
  3. Mix in remaining ingredients.
  4. Serve on its own or put it in a lettuce wrap.
I hope you enjoy this quick tuna salad as much as we did. It was filling and could easily be made even in a time crunch! I can definitely see us making this a few times a week, especially for lunches or busy nights.
